Our Signature Cupcakes List (Revamped)

I was having a really difficult time choosing our daily flavors for our new store. We were up to over 28 total flavors and I love each and every one. I simply would not and could not minimize the list because I felt I had a duty to our fans to offer each and every flavor every single day!

Then reality sunk in.

Unless  I could find a way to clone myself there was just no way we could bake all these flavors daily. A tear found its way into the corner of my eye as I narrowed our list down. (Please don't you cry too!)

Here is the newly updated daily list of cupcakes you will find at our new store in Winter Park.

Butternut Squash Cupcake


With the Fall season among us, I wanted to add another seasonal cupcake flavor for all our fans. After taking a short birthday vacation to the Bahamas back in September and tasting a Butternut squash soup with cinnamon and walnuts I knew exactly what our Fall flavor would be.

Behold our Butternut squash cupcake for November and December.



And here are the key ingredients: (though you can add as much or as little as you want to taste.)

1 1/2 cup of Butternut squash, cooked (add cinnamon sugar to the butternut squash for an added flavor)
2 teaspoons of Nutmeg
2 teaspoons of Allspice

You add that to your regular Vanilla cake recipe and bake. You can top with your favorite buttercream. We use our cinnamon buttercream.

Turning regular desserts into cupcakes

Today my family and I decided to go to Tony Romas for lunch. After we all finished our salads, ribs and shrimp we took a minute to review the dessert menu.




(Do you see that beauty to your left?? I did and my tastebuds loved it. I am going to be really honest with all of you and admit that Tony Romas' red velvet cake was the best gosh darn red velvet I EVER ate! I almost removed my red velvet cupcake off our menu because I was ashamed! How do they do it?? It was velvety smooth and sponge like, warm and the icing was exactly what they meant when they said "icing on the cake" deeeeeeeeelicious!)



(Sandwhich cookie!! Bring back the childhood years. This dessert reminded me of the ice cream sandwhich cookies I used to eat as a child back in NYC)




(Bourbon Pecan Cupcake with ice cream. Yes, its already a cupcake but since we don't make ice cream I will redo this tasty dessert and make it a Jubilee cupcake. Who doesn't like Bourbon and pecans! Yumm!)

Our new Cupcake lounge due to open in November!

Yes, I know...I wish we were in the new space sooner. But inspections take time and so do getting permits. Our contractors at Mulligan Construction are doing their absolute best to get us in our space ASAP.

So hang in there with me as we all dream along about our soon to come wine and beer parings, Italian Sodas and Cupcake Bar. Oh November...Sweet sweet November.

Waiting is such sweet sorrow.

Secret Cupcake Flavor: Sponch Cupcake

Yesterday I went grocery shopping at walmart for some items for my household and came across these delicious looking cookies on the caribbean food section. Sponch! It's a Mexican shortbread cookie with four globs of very sticky marshmallow coated with coconut and a glob of strawberry jam in the middle. 

I thought they would be perfect for our secret cupcake flavors and so purchased a pack.
I will admit, they are the perfect toppers for our cupcakes.


















We created these two delicious cupcake flavors for you to enjoy!

Vanilla or chocolate cake filled with marshmallow buttercream, topped with marshmallow buttercream, drizzled with strawberry cream cheese syrup and a SPONGI!

The world's first Jerk Cupcake

I did it! Finally! I have been playing with the idea of creating a Jerk seasoned cupcake since I went to help a friend with her Jerk Chicken documentary. For too obvious reason I did not want to use a chutney or other sweet ingredient that the wonderful Walkerswood company makes available. I wanted the challenge of using the orginal Walkerswood Jerk Seasoning.

So, while baking the daily cupcake flavors in our cupcake kitchen I glanced at the Jerk sauce bottle and it hit me!! Chocolate and fruity.

The cupcake: chocolate with jerk seasoning mixed inside.
The filling: I cut up some green apples, sprinkled coconut flakes, honey and then mixed in mango jam and put it to bake.


While that all baked I made some Mango buttercream and a yellow fondant flower.

The Jerk is the PERFECT spicy and sweet cupcake. I don't personally like spicy foods but I really enjoyed every bite. I can't wait for you all to try it.

Hot Mexican Cupcake (revamp)


Once upon a time, there was a cupcake called "The hot mexican." It was a delicious vanilla cake, topped with spicy buttercream and sprinkled with spicy mexican hot chocolate powder. As a matter of fact I have a picture here.



 It was a really great cupcake! And then...

The store where I bought my hot chocolate powder closed down. I can't express my sadness.

Almost a year later I FINALLY recreated the cupcake and I have to tell you...it's better than the original. And I'm an original addict. I love original movies, (remakes are so hard to redo without it being cheesy.) I love orginal Twinkies...you know, the twinkies they made almost twenty years ago, not the twinkies they sell now.

Candied Apples Cupcake Jubilee Style


We all have those wonderful childhood memories that linger. Mine cosist of weekends at the beach eating Nathan's hot dogs and stopping by Williams candy shop on Surf Avenue. Now that I live in Orlando Florida the nearest beach is 45 minutes away, Nathan's hot dogs are near the airport (20 minutes) and candied apples are hard to find.

I can't replicate a Natahan's hot dog even if I boguht a frozen pack from the store.  So, I decided to make some candied apples instead.

Jerk Cupcake

Ever since I joined my best friend to Jamaica to begin filming her Jerk Chicken Documentary I have been obsessed with creating a jerk cupcake. Yes, there is already a spicy cupcake on our menu, "St. Elmo's Fire" but this is a JERK CUPCAKE and it's not just any Jerk seasoning, its WALKERWOODS!!

Real food snobs know that if you're going to eat anything with the word "Jerk" in it, it better be Walkerwoods. I would be lying if I said that I knew anything about jerk foods because I do not. However, I am happily learning.

And today I learned that Restaurant Depot, a wholesale restaurant supplier in Orlando carries Walkerswoods products. I was sad that I didn't see any chutney but I did manage to grab a bottle of their spicy jerk seasoning.

I haven't decided exactly how I am going to incorporate this into a cupcake but I can't wait to taste the samples!

Cupcake in a Jar: Island Girl

I will admit that I have been too busy to blog. With plenty of non profit events, busy days at the store and now planning my own wedding, I am exhausted. The energy Gods had mercy on me today though and plentiful was the creativity running through me. I welcomed this energy and created two Cupcakes in a Jar flavors that are currently available at our Cupcakery.

First up: Island Girl
She is a seductive one. Creeping up on your tastebuds with coconut stained lips and rum soaked tongue. Yes, a cupcake can be seductive. And this cupcake is simply that - seductive.

It is layered with Rum soaked vanilla cake, rum drenched pineapple chunks, Madagascar vanilla buttercream and coconut flakes.



Doesn't it look simply delicious? Tomorrow I will tell you about the other cupcake in a jar I created. xoxo

Macy's Bridal Event 7/10/11

Thank you to all who showed up to celebrate your wedding! We gave away hundreds of delicious cupcakes and had the opportunity to meet happy brides-to-be and grooms-to-be. Of course, the first thing I asked the happy couples was "Where are you going to for your honeymoon?" I'm always curious to see what destination has been chosen to relieve stress from doing all that hard planning. I heard, "a cruise", "Bahamas" and "Hawaii." All great places that I too would have picked.

Of course, I also met some exceptional business owners. April Dorsey, from The d-tales was there with her superb event planning tips and David Ramirez from Cocoa Latte made my heart skip a beat with his delicious chocolate truffles. I had the coffee one and it was to die for!

I also met a lovely lady who coincidentally had the same exact name as me, Milagros Rodriguez, production Director for Save the date, another bridal organization and floral company.

With my own wedding a mere eleven months away, I am  relieved that there are great people out there such as these whom a bride can partner up with to make her wedding even more fabulous.

I can't wait until the next event.

Cupcake decor and supply websites I love

With so many websites on the Internet to purchase cupcake supplies from it can be overwhelming to choose the right one. In one year I have personally ordered from all the companies listed below. I wanted to share this with all of you because I know how frustrated I was when searching for specific things for Cupcake Jubilee! As a small business owner I have to use the products that are right for my business and my customers. Hopefully I can help you all by sharing this information.

By far, I think the most difficult item to find is the stainless steel cake stand with the acrylic cover. Sellers on Amazon.com offer it for sale but they sell it separately and its expensive. I could not see myself spending more than $15 on a cake stand.  (I have attached a picture of it below.) In my opinion its a great choice as far as cupcake stands are concerned because it's light weight and your customers can see whats inside. I'm in the process of searching for this item again as I need two more for my cupcake counter at the store. As soon as I find one at a great price I will definitely post it on here.

Easter Cupcakes

I'm a last minute person when it comes to holidays. Mostly its because I never look at a calender unless I'm catering an event and the reminder has been programmed into my cell phone. This year I promised myself that I would be more involved with the holidays. I want to being out the creative side and come up with something I don't usually do with cupcakes. (Unless of course its a special order.)

So with Easter right around the corner I took some time out and created TWO Easter cupcake creations. One is an Easter dozen. (available in Vanilla or chocolate cake) The other is a bunny cupcake takeaway cake. (Available in Vanilla or chocolate cake)

Low Calorie Cupcake Frosting

So, I was trying to figure out exactly how many calories my minis are..(For those calories counters out there.) And I was delighted to find a really easy to use website. It is http://recipes.sparkpeople.com/recipe-calculator.asp

I entered the amount of butter, powdered sugar, etc. I use in my frosting and in less than a minute I was able to see exactly how many calories my vanilla buttercream frosting is PER SERVING!! And guess how much?? No really, guess.....

Only 14 Calories! Yup! Isn't that awesome?!?!  My goal is to have a 50 calorie cupcake so I believe I am on my way to achieving this goal. I will give you guys an update as soon as I figure it out. :)

Diva Cupcakes

Last week I was asked to bake a dozen regular sized cupcakes for a tween. Her mom was very specific and I was willing to comply with all the wishes. I was a little worried that I had not made it "Girlie" enough or that the maybe that it was too 7 year oldish. (Twelve year olds are hard to please. I should know since I have my very own tween.) New Strawberry Cupcake

Every couple of months I revisit the cupcake flavors and tweek them to make them taste even better. This month First Love was reinvented. Behold the new and improved "First Love."

My favorite cupcake decor store!

For those of you that don't know...I'm a New Yorker..a very much spoiled New Yorker who is used to finding everything I need or want quickly and in abundance. After moving to Florida I soon realized I had to not only adjust to the climate and slower pace of it all, but also get used to not being able to find anything I am ever in search of. Like, chocolate covered espresso beans. (My one favorite snack from a lifetime ago.)

So I was thrilled when I found D & G Occassions off of Colonial. They have just about everything the baker in me could want. (except for the chocolate covered espresso beans. I will have to keep buying those at Whole Foods.) The prices are pretty reasonable and they have so many goodies stocked that you can easily walk out with a full basket of goodies.

I always get my Madagascar Bourbon Vanilla there ($32) and pastry bags. I wish they had a better selection of mini cupcake liners and baking tins. Especially ones that go together. When I find the liner I like I can't find the tin that fits it and vice versa. Why don't cupcake liner manufacturers sell the coordinating tin for their liners? It would be an "Up-sell" for them and so much easier for the purchaser to get things from one place. grr. Anyway, D & G Occassions only carries one type of cocoa powder, Hershey's. Double grr.

A great night at The Food and Wine Festival of Baldwin Park 2011

I baked 300 cupcakes today, thinking that it was enough for the Food and Wine Festival of Baldwin Park. However, I was mistaken. An hour and a half into the event we were out of cupcakes. It was nice to see people come back to the table for seconds and thirds. The Breakfast in bed was the most popular. Chocolate Pistaccio came in second and third popular choice was Papayo.

The cupcakes were such a hit that we couldn't supply fast enough. As soon as we would put a plate on the table they disappeared. And though we only received 15 People's choice tokens, (we lost to Capitol Grille )I was excited to be able to help such a great cause. The Cystic Fibrosis Foundation is a great cause so if you have not done so yet, support them!

Okay, maybe I'm a little bumbed we didn't win one of the awards. "Best Presentation" at the very least. I mean I had roses decorating the tower, beautiful wine glasses with roses holding up the tower, 65 roses decorated cupcakes AND a cute laminated card with the 65 roses logo and explanation of where 65 roses came from. Oh well, I was up against good old steak and wine. I will have to rethink my strategy for next year.
